Ingredients:
1 tbsp olive oil
1 lb lean ground beef
½ large yellow onion, finely chopped
3 cloves of garlic, minced
2 (8 oz) cans black beans, drained and rinsed
1 (8 oz) can red kidney beans, drained and rinsed
1 (8 oz) can white beans, drained and rinsed
1 (8 oz) can corn, drained
1 (28 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 (4 oz) tomato paste
1 tsp chili powder
3 tsp ground cumin
2 tsp paprika
1 tsp cumin
Salt and freshly ground black pepper
Shredded cheddar cheese, avocado, sour cream, and/or chives for serving
Directions:
Prep Time: 15 minutes
Cook Time: 4 hours
Total Time: 4 hours and 15 minutes
Step 1: Sauté Aromatics
Heat 1 tablespoon of olive oil in a cast iron pot over medium heat, or use a large pot on medium-high heat.
Add the finely chopped ½ large yellow onion and sauté for about 2 minutes until translucent.
Add the minced garlic and sauté for an additional minute until fragrant.
Step 2: Brown the Beef
Return the skillet to medium-high heat and add the 1 lb lean ground beef.
Break up the beef as you stir and cook until it's browned, about 5 minutes.
Step 3: Combine Ingredients
Add in the drained and rinsed 2 (8 oz) cans black beans, 1 (8 oz) can red kidney beans, 1 (8 oz) can white beans, and 1 (8 oz) can corn to the pot.
Pour in the 1 (28 oz) can diced tomatoes, 1 (8 oz) can tomato sauce, and 1 (4 oz) tomato paste.
Sprinkle in 1 tsp chili powder, 3 tsp ground cumin, 2 tsp paprika, and an additional 1 tsp cumin.
Season with salt and freshly ground black pepper to taste.
Step 4: Simmer & Slow Cook
Cover the pot with a lid and set the heat to low.
Allow the chili to simmer and meld its flavors together for 4 hours, stirring every half hour or so.
Step 5: Serve & Enjoy
Once the chili has simmered, ladle it into bowls.
Top each serving with shredded cheddar cheese, a dollop of sour cream, fresh sliced avocado, and a sprinkle of chopped chives.
