Ingredients:


For the Shrimp:

  • 1 lb Large Shrimp, peeled and deveined

  • 1 cup Panko Breadcrumbs

  • 1 tsp Paprika

  • 1 tsp Garlic Powder

  • ½ tsp Cayenne Pepper

  • Salt and Pepper to taste

  • 2 Eggs, beaten

  • Vegetable Oil for frying

For the Slaw:

  • 2 cups Shredded Cabbage and Carrots

  • ¼ cup Mayonnaise

  • 1 tbsp Creole Mustard

  • 1 tbsp Lemon Juice

  • Salt and Pepper to taste

For Assembling:

  • 4 French Bread Rolls, split and toasted

  • Sliced Tomatoes

  • Sliced Pickles

Directions:


Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes


Step 1: Prepare the Shrimp

  1. In a shallow bowl, mix the flour, paprika, garlic powder, cayenne pepper, salt, and pepper.

  2. Dip each shrimp into the beaten eggs, then coat with the seasoned flour mixture.

Step 2: Fry the Shrimp

  1. Heat vegetable oil to 350°F (175°C) in a skillet.

  2. Fry coated shrimp in batches for 2-3 minutes on each side until they're golden and crispy.

  3. Remove fried shrimp and drain them on paper towels.

Step 3: Prepare the Slaw:

  1. In a bowl, combine shredded cabbage and carrots.

  2. Mix in mayonnaise, Creole mustard, lemon juice, salt, and pepper.

  3. Taste and adjust seasoning as needed.

Step 4: Assemble the Sandwiches:

  1. Spread a layer of the slaw on the bottom half of toasted French bread rolls.

  2. Arrange slices of tomatoes on top of the slaw.

  3. Layer the crispy fried shrimp on top of the tomatoes.

  4. Place sliced pickles on the shrimp.

  5. Top with the other half of the roll to complete the sandwich.

Step 5: Serve and Enjoy:

  • Gently press the top of the sandwich to meld the flavors together.

  • Serve Shrimp Po'Boys with a side of extra slaw, Creole coleslaw, or sweet potato fries.
